Brandy and Orange Chicken

Description:
The original recipe is for the chicken with stuffed shrimp. I have made it this way a few times, because my sweet husband loves shrimp. However, I have now learned that he does not like stuffed shrimp very much. Ah, well. The chicken is great!

Ingredients
2 boneless, skinless chicken breasts
1/4 tsp ground thyme or poultry seasoning
S&P to taste
2 oz brandy (about a shot and a half)
1 TB butter
Zest from 1/2 an orange
Parsley springs and sliced navel orange (the one you took the zest from) as garnish
Directions
Season chicken breasts with poultry sesoning or ground thyme, salt and pepper.
Spray a nonstick skillet w/ nonstick and cook breasts 5 minutes on each side, then remove to somewhere warm (I use a glass dish in a 100° oven).
Add brandy to the pan and cook alcohol off, 1 minute.
Add butter and orange zest, stirring until butter melts.
Place chicken on dinner plates, pour sauce over each, and garnish w/ parsley and oranges.
