Balinese Cucumber Salad

Ingredients

3 TB dry-roasted peanuts, coarsely chopped

1 large cucumber, preferably English (so there's more flesh and less seeds)

1/4 large sweet onion

3 TB rice vinegar

1 1/2 TB sugar, more or less to taste

1/4 tsp salt, more or less to taste (original recipe called for double this amnt)

Directions

Peel and seed the cucumber. Cut the cucumber crosswise into 3" sections. Then, cut it lengthwise into spaghetti-thin strips. A mandoline slicer would help with this task.

Cut the onion into extremely thin slices.

Mix the vinegar, sugar, and salt together. Continue stirring until the sugar and salt are both dissolved into the vinegar.

Toss with the cucumber and onion.

Sprinkle the nuts over the salad, and serve.
